Tahitian Vanilla Ice Cream
Episode 116: Tahitian Creme Anglaise
This is hands down the tastiest, creamiest, richest, most wonderful vanilla ice cream ever. Because it's made with a crème anglaise base, it has that irresistibly "chewy" texture, the mark of the best French ice creams. And because it's flavored with Tahitian vanilla bean, it's deeply aromatic. Once you have the crème anglaise on hand, it's also a snap to make, so much so that you'll want to try all the variations that follow.
Makes 6 cups
Ingredients
4 cups Tahitian Crème Anglaise
Directions
Following the manufacturer's instructions, freeze the Tahitian Crème Anglaise in an ice-cream maker. Continue freezing the ice cream in the freezer, preferably overnight or at least 4 hours, and serve.
VARIATIONS
Chocolate Chip Ice Cream - After freezing the ice cream in the ice-cream maker, fold in 2 cups of bittersweet chocolate chips.
Chocolate Chip Swirl Ice Cream - After freezing the ice cream in the ice-cream maker, fold in 2 cups of bittersweet chocolate chips, then drizzle and fold in 1 cup softened Bittersweet Chocolate Ganache .
Coffee Ice Cream - Reserve 1/4 cup of the Tahitian Crème Anglaise and make the ice cream with the rest. Mix 3 tablespoons of instant coffee with the reserved cream. After freezing the ice cream in the ice-cream maker, fold in the coffee-flavored mixture.
Caramel Macadamia Nut Ice Cream - Prepare the macadamia brittle on page 249. After freezing the ice cream in the ice-cream maker, fold in the nut mixture.
