Tropical Fruit Granita
Episode 124: Tropical Fruit Salsa
Here's a homemade sorbet-like dessert you can make without the usual frozen dessert hassle. All you do is combine the salsa with sparkling wine and freeze the mixture overnight. Because alcohol freezes at a lower temperature than other liquids, the dessert remains somewhat soft and can be scraped into serving bowls.
This "instant granita" also works beautifully as a mid-meal intermezzo as it's not too sweet-just refreshing.
Serves 4
Ingredients
4 cups Tropical Fruit Salsa
2 cups Champagne, other sparkling wine, or carbonated water
Directions
- In a food processor, purée the salsa, add the wine, and pulse a few times to blend.
- Transfer the mixture to ice-cube trays minus the cube grid, or to a square or rectangular container at least 2 inches deep, and freeze overnight. Just before serving, scrape the mixture using the back of a large fork to make large flakes.
Serve the granita in chilled bowls.
