Ingredients
1 1/2 cups naturally brewed soy sauce
1 cup Shaoxing wine
1 cup brown sugar
2 cups water
3 slices ginger
2 oranges, quartered
10 figs, halved (the ripest you can find)
2 heads garlic, halved
2 bunches scallion, cut into 2-inch lengths
3 pounds chicken wings, rinsed, dried
Steamed brown sushi rice, for serving
Kosher salt and freshly ground black pepper
Directions
In a small stockpot over medium-high heat, combine everything but chicken wings and bring to a simmer. Check flavor -- it should taste slightly sweet. Add chicken wings and bring back to a simmer. Simmer for 1 hour until wings are fall-off-the-bone tender. Serve on hot, steamed brown sushi rice. If you find garlic halves, squeeze out cloves…delicious!
