Ingredients
2 tablespoons chile oil
3 spicy sausage, removed from casings and chopped up
1 large yellow onion, minced
2 large sweet potatoes, 1/2-inch dice
1 red bell pepper, 1/4-inch dice (optional)
1 bunch scallions sliced thinly, white and green separated
8 eggs
1/2 cup heavy cream
1 1/2 cups grated Cabot sharp cheddar cheese
Kosher salt and freshly ground black pepper to taste
Directions
Pre-heat oven to 450 degrees. In a cast iron pan coated with chile oil, saute the sausage meat until browned, about 6 minutes, then add onion and sweet potatoes. Saute until soft, about 6 minutes, and add bell pepper and scallion whites. Meanwhile, in a large bowl, combine the eggs and cream. Add egg mixture to pan, stir well and top with cheese. Place in oven and bake until just firm. Remove from oven and allow to stand about 5 minutes before slicing. Serve each slice topped with scallion greens.
