Ingredients
2 pork tenderloins, trimmed, sliced in to 1/4-inch strips
1 cup Sesame Paste
3 cups soaked rice noodles
2 large navel oranges, segmented, with their juice
Chopped peanuts, for garnish
Cilantro, for garnish
Sliced scallion greens, for garnish
Grapeseed or canola oil for cooking
Kosher salt and freshly cracked black pepper, to taste
Directions
In a wok or saute pan coated with oil over medium-high heat, stir-fry the pork, moving quickly until cooked through, about 3 minutes. Add rice noodles and Sesame Paste and toss. Add the oranges and juice, toss to combine and check for flavor. Spoon into a large bowl, garnish with cilantro, scallions and peanuts and serve immediately.
