Ingredients
2lbs pork belly cut into 2inch thick strips, (skinless)
1 cup orange juice
1 cup soy sauce
1/4 cup dark brown sugar
2 star anise
2 Thai bird chillies
1 cinnamon stick
1t fennel seeds
Zest of 1 orange
1/2 cup of dark miso
Directions
Pre-heat oven to 350 degrees.
Reduce orange juice, soy sauce & brown sugar by half with spices and bird chillies. Strain and add grated orange zest and miso. Marinade pork belly for at least 1 hour or up to 6 hours. Rooast on a rack in a 350 degree oven for 40 minutes or until the pork starts to caramelize and turn mahogany. You can increase to broil for the last 10 minutes for crispy pork belly. Cut pork belly on the bias into slices, serve over sautéed bok choy.
