“ Philly Cheese Steak" with Maitake Mushrooms and Yukon Gold Potato Fries

Serves 4
Ingredients
Maitake "Philly Cheese Steak"
1 large red onion, sliced
1 head maitake, florets and stemmed peeled and julienned
2 cloves minced garlic
1 tablespoon of Wanjashan, naturally brewed, organic soy sauce
1 pound shaved beef, top round
½ bunch basil, picked
¼ cup Dijon mustard
¼ cup mayo
1 teaspoon coarse toasted ground peppercorn
1 tomato sliced
1head of iceberg lettuce shredded
4 hoagie rolls, (toasted optional)
Yukon gold fries (recipe below)
canola oil
Kosher salt and freshly ground black pepper to taste

4 large Yukon gold potatoes
1 tablespoon canola oil
Kosher salt
T-Fal ActiFry cooker
Directions
Maitake "Philly Cheese Steak"
In a sauté pan on med-high heat, coated lightly with oil, add onions, season with salt and pepper. Sautee until caramelized, about 8 minutes and set aside. In same pan on med-high heat and coated with oil, add maitakes, garlic and sauté till crisp, let maitakes sit in pan to brown on one side before flipping. Add 1 tablespoon of naturally brewed soy sauce and cook for an additional minute. Set aside. Again in same pan, coat with oil and sear the beef quickly, season. Add back the onions to heat through then add the maitakes. Meanwhile, mix the Dijon mustard, mayo and peppercorn together. Make sandwiches layering the basil, tomatoes and lettuce. Spread Dijon mustard-mayo on both sides of bread. Top with hot meat mixture.
Yukon Gold Fries
If you have one, using a French fry slicer, slice potatoes into uniform French fry matchsticks. Otherwise, cut into 1/4-inch x 1-4inch matchsticks, using the length of the potato as your guide. Add potatoes to the T-Fal ActiFry along with oil and cook until golden brown and delicious, about 45 minutes. Remove from T-Fal ActiFry to a paper towel-lined plate and season with kosher salt. Alternatively, deep-fry in 3 inches of canola oil heated to 350 degrees until golden brown and delicious.
