Tamari Glazed Alaskan King Salmon with Chipotle Vinaigrette Salad

Serves 4
Ingredients
4 6oz portions Alaskan King Salmon, boneless, skin on, scale off
1/4 cup Wanjashan low-sodium naturally brewed tamari
1/4 cup brown sugar
1 tsp ground chipotle peppers
2 tablespoons sesame oil
For the vinaigrette:
1/4 cup rice wine vinegar
1/2 tsp chipotle en adobo, minced
1 tablespoon sugar
1/2 cup canola oil
1 tablespoon sesame oil
1 handful fresh basil, mint and cilantro
1 handful micro greens
Directions
Combine the tamari, brown sugar, chipotle and sesame oil in a food processor to form a paste. Rub the paste on the salmon. Sear the salmon in a hot pan over medium high heat until cooked to medium rare. Remove from pan. In a mixing bowl, whisk together the rice wine vinegar, chipotle, sugar and oils. Season to taste with salt. Toss vinaigrette with herbs and greens. To serve place salmon on plate, top with micro green and herb salad.
