Tamari Slow Braised Chipotle Pork Stew
Episode 801: Tamari & Chipotle Chiles
Pair with Condesa de Leganza Rosado
Serves 4
Ingredients
2 lbs pork shoulder, cut into 1 inch cubes, season with salt & pepper
1 large yellow onion, 1 inch pieces
1 head of garlic, sliced
2 tablespoons chipotle en adobo
4 stalks of celery, 1 inch pieces
1 jicama, ½ inch pieces
2 red bell peppers, cut into 1 inch pieces
½ cup Wanjashan low sodium naturally brewed Tamari
water to cover
Kosher salt and freshly ground black pepper to taste
Canola oil to cook
Cooked House rice to serve
Directions
In a large casserole or small stock pot on medium heat, coat lightly with oil and sear the pork until brown on all sides, and set aside. In same pot, add the onions, garlic, and Chipotle and sauté for 1-2 minutes. Add celery, Jicama, red bell peppers and sauté until soft, season, about 2-3 minutes. Add the pork, naturally brewed tamari and water to cover; check for flavor. Bring to a simmer, for 1.5 hours or until meat is fork tender. Serve on house rice.
