Ingredients
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 cup hoisin sauce
2 cups whole canned tomatoes, drained, chopped
2 bunches scallions sliced 1/2-inch thick
1 1/2 pounds naturally fed ground turkey
1 cup panko or light bread crumbs
Canola oil
Kosher salt and freshly ground black pepper to taste
Sweet potatoes, baked through in oven, wrapped in foil, for serving
Sambal, for garnish
Directions
Pre-heat oven to 350 degrees. In an oven-proof saute pan over medium heat coated lightly with canola oil, saute garlic and ginger and hoisin for 2 minutes. Transfer hoisin mixture to a large bowl and add tomatoes, scallions, panko and turkey and mix well. Season with salt and pepper. Cook a small piece of mixture to check for seasoning. Add a touch of oil to saute pan and form loaf in saute pan. Bake in oven until cooked through, about 45 minutes. Let rest for 15 minutes before slicing. Garnish slices with sambal and serve with baked sweet potatoes, if you like.
