Ingredients
Juice of 1 lime
2 cups green papaya julienne
1 1/2 pounds skirt steak, trimmed
1 cup Spicy Almond Sauce
1 lime, cut into wedges for garnish
Almonds for garnish
Kosher salt and freshly cracked black pepper
Directions
In a bowl, mix the lime juice and green papaya and season with kosher salt and freshly ground black pepper to taste. Let stand. Season the steak well and prepare a hot, cleaned grill, sprayed slick. Grill steak on both sides, 6-8 minutes until medium rare and let stand 8 minutes before slicing on the bias. Add the hot slices to the green papaya and toss with the Master. Check for flavor. Zig-zag master across plate to add richness. Garnish with cilantro and chopped nuts.
