Iris Tsai's Pork, Shiitake and Parsley Shumai
Episode 701: Wonton Wrapper/Parsley
Makes about 10 dumplings
Ingredients
1/2 pound naturally fed ground pork
1/4 cup chopped, rehydrated, shiitake mushrooms
2 tablespoons chopped parsley, plus more for garnish
1 teaspoon minced ginger
1 teaspoon minced garlic
1 tablespoon sesame oil
1 tablespoon Shaoxing wine
1 teaspoon vegetarian oyster sauce
Kosher salt and freshly ground black pepper to taste
1 package wonton wrappers, thin, corners cut off, whole wheat preferred
Banana leaf or parchment paper sprayed with cooking spray
Directions
Prepare a steamer lined with banana leaf or parchment -- if using parchment, spray lightly with cooking spray. To make filling, combine all ingredients in a large bowl and mix well. Season with salt and pepper. Form shumai and steam for 10 minutes. To serve, garnish with chopped parsley.
