5 large Yukon Gold/Estima potatoes
2 pounds/900g boneless, skinless chicken thighs
Kosher or sea salt
Canola (rapeseed) oil
3 large leeks
1 pound/450g carrot nubs
1 bunch fresh tarragon
Naturally brewed soy sauce
Low-sodium chicken stock
1 bunch scallions (spring onions)
Nonfat plain (fat-free natural) Greek yogurt
