Naturally brewed soy sauce
Canola (rapeseed) oil
5 large or 6 medium Japanese eggplants (aubergines)
Kosher or sea salt
2 bunches scallions (spring onions)
1 head garlic
1-inch/2.5cm piece gingerroot
Toasted sesame oil
Toasted sesame seeds
