12 ounces (350g) fresh or 8 ounces (225g) dried chow mein noodles
Kosher or sea salt
Canola (rapeseed) oil
1 head garlic
1-inch/2.5cm piece gingerroot
1 bunch scallions (spring onions)
1/3 pound/150g shiitake mushrooms
1/3 pound/150g button mushrooms
1/3 pound/150g oyster mushrooms
1 large jicama
1 red bell pepper
Low-sodium vegetable stock
Vegetarian oyster sauce
Toasted sesame oil
