CITRUS
HERBAL TEA–STEAMED SCALLOPS
Besides being delicately
delicious, this is the heart-healthy dish. It’s just flavored steamed
scallops combined with fresh greens and a tantalizing vinaigrette. It
also makes a nice change of pace when
you’ve had too many rich foods, and you want something
that’s light yet satisfying.
There are many steamers out
there. I use the traditional Chinese bamboo one, lined
with a lettuce leaf. The bamboo adds a little flavor to the dish, and
the steamer is easy to use. That
said, I’ve also had good luck with Western steamers, and
recently with automatic ones, which generate even heat and don’t warm
up the kitchen, a good thing in
summer.
Serves 4

1 cup
Citrus Herbal Tea Rub

12 large
scallops
-
Kosher
salt and freshly ground black pepper to taste

1⁄4
pound mâche or other mixed small greens, water cress or upland
cress

1⁄4
cup Five-Herb Vinaigrette or other homemade vinaigrette

Fill the bottom part of a large steamer with 1 quart of water. Bring to
a boil over high
heat and add the tea rub.

Meanwhile, season the scallops with the salt and pepper. Spray the
perforated steamer
section with nonstick cooking spray, fit it over the pot, and add the
scallops. Steam the
scallops, covered, until just cooked through, 5 to 7 minutes. 3.
Meanwhile, in a large bowl combine the mâche and vinaigrette and toss
to coat. Season with
the salt and pepper. Add the scallops and toss very lightly, Divide the
salad among 4 plates and
serve.
