TOASTED SESAME 
NOUGAT BARK

Recipe Yields: Two 13- x 9-inch pans

  • 1 recipe Jasmine Caramel Sauce

  • 1 cup toasted sesame seeds

  • Dark chocolate (optional)

Reduce caramel sauce by 50 percent over medium-low heat, heating to almost the hard-crack stage. Stir in sesame seeds and pour out onto a sheet pan lined with greased parchment paper. Let cool.

Break into random pieces for bite size candies and dip into melted chocolate, or chop and use for garnish on ice cream sundaes.

In addition to sauces, caramel is the basis for many soft and hard candies. This one features toasted sesame seedsa common ingredient in many Chinese sweets. It’s then dipped into dark chocolate or served ungarnished. This is perfect when you are looking for a “little something” to have at the close of a meal or with a cup of tea.
