Craneberry-Wasabi Pork Pot Stickers
Makes 12 to 16 pot stickers
1 pound naturally fed ground pork
1 cup Cranberry-Wasabi Horseradish Relish, plus more for garnish
1 package round pot sticker wrappers
Egg wash (3 tablespoons of water per large egg, lightly beaten)
Grapeseed or canola oil for cooking
Kosher salt and freshly ground black pepper
Prepare a fryer or medium stock pot filled 1/3 the way up with canola oil and heat to 350 degrees. In a chilled bowl, mix the pork with the Cranberry-Wasabi Horseradish Relish and season with kosher salt and freshly ground black pepper. Lay out the wrappers and place about a tablespoon of filling in the center. Brush the edges with egg wash. Fold and crimp at least 5 times to seal well. Repeat. In a sauté pan coated lightly with oil over high heat, add the pot stickers until brown. With lid in hand, add about ¼ cup of water and cover immediately to steam. When water is evaporated, take cover off and allow pot stickers to crisp up. Serve immediately with extra Cranberry-Wasabi Horseradish Relish.
