David Burke’s Two Bit(e) Lobster Tacos
Serves 6 as an hors
d’oeuvre

1 ½ pounds
cooked lobster meat, cut into medium (1/2-inch) dice
-
1 teaspoon fine
herbs, chopped (chive, chervil, parsley)

1 tablespoon
carrots, minced
-
1 tablespoon
celery, minced
-
1 tablespoon
leek, minced
-
2 tablespoons
lemon juice
-
1 green apple,
julienned
-
½ cup good
quality or homemade mayonnaise

Kosher salt and
freshly ground black pepper

12 3-inch “taco
shell” Honey Sesame Tuiles
In a large bowl,
combine lobster meat, herbs, carrots, celery, leek, lemon juice and apple
with ¼ cup of mayonnaise. Check consistency and add more mayonnaise if
desired. Season with kosher salt and freshly ground black pepper. To
serve, spoon a small amount of lobster salad into a Honey Sesame Tuile
“taco shell”, place on a platter and serve.
