Granita Martini: Shake 3 ounces of vodka over ice and strain into a martini glass half full of granite. Garnish with a tuile and lime wedge

David Burke’s Two Bit(e) Lobster Tacos

Serves 6 as an hors d’oeuvre 

  • 1 ½ pounds cooked lobster meat, cut into medium (1/2-inch) dice

  • 1 teaspoon fine herbs, chopped (chive, chervil, parsley)

  • 1 tablespoon carrots, minced

  • 1 tablespoon celery, minced

  • 1 tablespoon leek, minced

  • 2 tablespoons lemon juice

  • 1 green apple, julienned

  • ½ cup good quality or homemade mayonnaise

  • Kosher salt and freshly ground black pepper

  • 12 3-inch “taco shell” Honey Sesame Tuiles

In a large bowl, combine lobster meat, herbs, carrots, celery, leek, lemon juice and apple with ¼ cup of mayonnaise. Check consistency and add more mayonnaise if desired. Season with kosher salt and freshly ground black pepper. To serve, spoon a small amount of lobster salad into a Honey Sesame Tuile “taco shell”, place on a platter and serve.
