Granita Martini: Shake 3 ounces of vodka over ice and strain into a martini glass half full of granite. Garnish with a tuile and lime wedge

Watermelon Granita in a Tuile Basket

Serves 4 

  • 2 cups watermelon granita (recipe below)

  • 4 tuile baskets

Use a 5-inch square template to stencil tuile batter onto silpat and bake according to directions.  Place warm tuile in a 3-inch diameter bowl and place another bowl on top, sandwiching the tuile and forming it into a bowl shape. Allow the sides of tuile to drape over the bowl.  Fill cooled tuile baskets with watermelon granita and serve.

Watermelon Granita

Makes 4 cups 

  • 3 cups rough chopped watermelon, deseeded

  • 1 cup Champagne

  • Juice of 1 lime

  • Sugar, as needed*

 *If watermelon is not ripe and sweet, add sugar to achieve pleasant sweetness in final product. 

In a food processor fitted with a sharp blade, combine watermelon, Champagne and lime juice (and sugar if needed) and blend at a high speed until smooth. Place in 9x11 baking dish and freeze overnight.  To serve, scrape with a fork and spoon shavings into serving dish.
