WINE NOTES

Finca Allende SL 2001: 100% Tempranillo. Dual exposures of the DeGregorio family vineyards result in two distinct microclimates. The vineyards that face north-northwest produce grapes that are higher in acidity, which gives the wine structure. The south-southeast-facing vineyards produce grapes with ripe fruit aromas. Estate-bottled unfiltered.

Mumm Rose Champagne: An original cuvee combining nuance & finesse coming from Cordon Rouge grapes and power and fruit from Pinot Noir. Delicate and smooth.

Ginger Syrup
Master
Makes about 4 cups

  • 4 cups sugar
  • 2 cups fresh ginger, cut into 1/8-inch slices (about 2 large hands)
  • 2 cups water

In a medium saucepan over high heat, combine sugar, ginger and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.
(Trick: toss dried ginger in sugar, bake at 200 degrees until dried thru, about 4 hours and voila-ginger candy)

Best Ever Ginger-Lime Ale
Serves 4

  • 1 quart club soda, well chilled
  • 1/2 cup ginger syrup
  • 1 lime, cut into wedges
  • Candied ginger, for garnish

Fill four glasses with club soda. Pour two tablespoons ginger syrup down side of each glass to create a layer of syrup on bottom. Squeeze lime wedge into each drink, garnish with a fresh lime wedge and candied ginger.
