Kaffir-Key Lime Mousse with Berries
Serves 4
 

• 2 cups Kaffir-Key Lime Curd
• 2 cups whipped cream, stiff peaks
• 3 pints mixed berries (raspberries, blueberries, blackberries)
• 1/4 cup mint ribbons, save 4 mint tops for garnish
• Best-quality short bread cookies, crumbled

In a large bowl, fold Kaffir-Key Lime Curd with whipped cream to make "mousse." Meanwhile, in a large bowl, combine mixed berries with mint ribbons. In chilled, large martini or coupe glasses, build layers with mousse and berries and cookie crumbles. Repeat and end with dollop of whipped cream; garnish with mint tops.
