Chicken-Cucumber Noodle Salad
Serves 4
- 3 large chicken breasts, skin off, fully
grilled, chilled and cut into 1/4-inch slices
- 1 large English cucumber, peeled, halved
lengthwise, seeds scooped, cut into 1/4- inch half moons
- 1 red bell pepper, cut into 1/4- inch dice
(save some for garnish)
- 3 cups blanched noodles, chilled
- 1 cup Sesame Paste
- 2 heads baby romaine, washed and dried, cut
into 1-inch ribbons
- Toasted sesame seeds for garnish
- Kosher salt and freshly ground black pepper,
to taste
In a large bowl, combine chicken, cucumber, bell
pepper, noodles and Sesame Paste and toss well. Season and check for flavor. To
serve, divide among four plates, top with romaine lettuce and reserved bell
pepper and sesame seeds.
