Steps 1-2:
Take 3-4 dried mushrooms and soak in a glass of warm
water for 5 minutes. Stir well. |

Step 3:
You will know mushrooms are properly soaked when they
are supple to the touch. Twist them to make sure they are soft
enough. |

Step 4:
While carefully holding stem with one hand, snip off
the stem. |

Step 5:
You may also do this by lying the mushroom flat on
the cutting board with the sides of the cap pulled together and
back. |

Steps
6-8:
Pile mushrooms on top of each other 2-3 at a time.
While holding pile together with one hand, carefully slice shiitakes
into 1/8 inch slices. |
