Julienning Leeks
Step 1 & 2:
Cut off the dark leafy green part on one side and the hairy end on the other. (Never waste good fresh food, you can always save the green stalks for stocks!)

Run the white core under cold water and pat dry. Cut along the white core to make several two-inch pieces.

Then slice each of these in half lengthwise to make half-moon shaped strips.

If you face each half-moon shaped piece upwards, you can then pull out the center third.
Step 5

Then flatten the outer two thirds facing core side down on your cutting board.
Step 6
Step 7-9:
Slice these into 1/8th inch x 2 inch slices along the grain. Repeat this flattening technique with the smaller center core and slice this section into 1/8th inch x 2 inch slices along the grain.
