2 cups Lime Leaf-Key Lime Curd
2 cups whipped cream, stiff peaks
3 pints mixed berries (raspberries, blueberries, blackberries)
1/4 cup mint ribbons, save 4 mint tops for garnish
Best-quality shortbread cookies, crumbled
In a large bowl, fold Lime leaf-Key Lime Curd with whipped cream to make "mousse." Meanwhile, in a large bowl, combine mixed berries with mint ribbons. In chilled, large martini or coupe glasses, build layers with mousse and berries and cookie crumbles. Repeat and end with dollop of whipped cream; garnish with mint tops.
