12 Island Creek Oysters, cleaned and shucked
1/4 cup Wanjashan, organic naturally brewed soy sauce
1/4 cup Wanjashan, organic rice wine vinegar
1 tablespoon Thai lime leaves, minced
1 tablespoon cilantro, chopped
1 tablespoon shallots, minced
Salt and pepper to taste
In medium bowl, mix soy sauce, vinegar, Thai lime leaves, cilantro and shallots. Stir to combine. Check for seasoning, add to taste. Spoon 1/2 tablespoon over raw, shucked oysters and serve.
